Hearty Beef and Butternut Squash Stew ❤️💚
Heat 1 tbs oil in a large pan on med/high heat. Brown 1 & 1/2 lb lean stew beef. Add in minced garlic, one diced onion, 1/2 diced red bell pepper and 1/2 diced green bell pepper until softened. Add in two medium chopped tomatoes, one cup organic beef broth, a bay leaf and sea salt & pepper. Bring to boil, cover & simmer for 30 minutes. Add in 1 butternut squash, cubed, cook an additional 10inutes until sauce is thick and beef is tender. Remove bay leaf, divide into six portion. Scarf up deliciousness.
