So one day I wanted guacamole. And I wanted to get some protein. Thus Chicken guacamole lettuce wraps were born. The crunch of the romaine lettuce really adds to the meal. This is best served fresh, so save it for a weekend meal!
Mash two ripe avocados, dice 1 jalapeño pepper, dice 1 medium tomato, dice 1 garlic clove, dice 1/2 red onion, chop 2 T cilantro, 1/2 lime juice, 1 dash of hot sauce. Mix all together. Chill in fridge for at least two hours. Divide into two portions, mix with 1 Red shredded chicken and serve on one crisp romaine lettuce leaf.
