Kale & Mushrooms

I’m not a super fan of salad. BUT if I could count sautéed veges as a salad, then I would clock a lot of salads. Cooking your veges has pros and cons. You lose some nutrients but you also gain some. For example, with tomatoes you lose vitamin c but you gain antioxidants. Also raw veges are good but sometimes TOO much fiber can be a bad thing. Know what I mean?

So here I’ve sprayed in some olive oil to my cast iron skillet, added in garlic. Then mushrooms, then kale and finally tomatoes. YUM!
