Here’s a fun and hearty meal that’s delish!
Meatballs: Preheat oven to 400 degrees. Saute 1/2 onion finely chopped, 2 garlic cloves, 1/4 tsp each of salt, pepper, thyme, oregano in olive oil. Add four green containers of spinach. Let cool. Marinate (shake it up) 1 pound mushrooms in 1/4 cup balsamic vinegar, 2 tbs olive oil, garlic, italian seasoning, salt and pepper while preparing meatballs.
Mix ground turkey with sautéed veges, add 4 tbs worcestershire sauce and 1 egg. Make meatballs, place in muffin tin to cook.
Place mushrooms lengthwise on kabobs, roast on cookie sheet (or whatever) in oven with meatballs for about 15-20 minutes. While they are cooking, sauté 1/4 onion until tender, add garlic. Add italian seasoning. Food process 2 green containers of diced tomatoes, add to pan. Add 4 tbs balsamic vinegar, salt and pepper. Bring to boil, simmer while mushrooms/meatballs cook.
