Something sweet

If you’ve been on the 21 Day Fix for a while you might be hankering for something chocolate!!!! Thankfully there are some remedies! Remember these are treats, not dailies. These are also replacing a yellow!

Sure, you could settle for additive- and preservative-packed, store-bought treats. Or you invest a few minutes in the kitchen and enjoy these tempting-and pretty darn healthy-homemade goodies. -Autumn

Chocolate squares.

In a previous challenge, my girl Michelle went EXTREME-an amped up version of the 21 Day Fix. She still needed to satisfy her chocolate craving. This was a quick fix for her! 1 tsp melted coconut oil mixed w/ 1 tsp of Chocolate Shakeology. Poured in the yellow lid and put in the freezer. Delicious! 😋

Chocolate-Peanut-Butter-Cups

Chocolate Peanut Butter Cups (hat tip)

WHAT YOU WILL NEED (this will make 8 peanut butter cups)

4 tablespoons of coconut oil
8 tablespoons of chocolate shakeology
4 teaspoons of natural peanut butter
Place 2 tablespoons of coconut oil in a microwave safe bowl. Microwave for 30 seconds until the coconut oil is liquefied.

Stir in 4 tablespoons of chocolate shakeology. Divide the chocolate mixture evenly between 8 spots in a mini muffin tin. Place in the freezer for 5 minutes.

Pull the muffin tray out of the freezer. Place a half a teaspoon of peanut butter on top of each chocolate disk. Spread the peanut butter evenly over the hardened chocolate with a knife.

Melt the remaining 2 tablespoons of coconut oil in the microwave. Stir in the remaining 4 tablespoons of chocolate shakeology in. Use this to pour on top of the peanut butter layer. **You will want to do this in 2 batches so it doesn’t harden up on you while the first layer of chocolate is hardening in the freezer.

Place the muffin tin back in the freezer and leave it in there for at least 30 minutes.

The chocolate cups will slide easily out of the tin. Keep the cups stored in the fridge or freezer for the best consistency!

Chocolate Pudding (hat tip)

Ingredients
3/4 c plain yogurt
1 scoop Chocolate Shakeology
1 t pure maple syrup
Instructions
Combine all ingredients and stir thoroughly.
Enjoy immediately or fridge to set & thicken (approximately 1 hour).
Put in your belly!

Great Tip
This recipe can easily be split into two servings. Try serving it with 1 cup of strawberries, too! YUM! Suggested optional toppings: unsweetened coconut, cacao nibs, crushed nuts, coconut whip.

PeanutButterCookies

Peanut Butter Cookies (hat tip)

Ingredients
1/2 c peanut butter
1 egg
1/4 c honey
Instructions
Preheat oven to 350 and line rimmed baking sheet with parchment paper.
Whisk egg in small bowl. Add peanut butter and honey, and mix until fully combined.
Using a tablespoon, drop cookies 2 inches apart on prepared baking sheet. The batter is gooey. Don’t worry. Just stay with me here.
Bake for 15 minutes on middle oven rack.
Remove from oven and allow to cool on baking sheet for 5 minutes. Cookies will continue baking and firm as they cool.
Eat one cookie and convince yourself not to eat the other 11 the same sitting.

Need more spice? Flavor them up with vanilla extract and cinnamon!

Chocolate Shakeology Mug Cake (hat tip)

Ingredients:
1/4 tsp baking powder
1 tbsp sweetener Stevia (optional)
1 scoop Chocolate Shakeology
dash of salt
1 egg
optional mix in: 1 tsp peanut butter, cocoa powder
2 or 3 tbsp vanilla almond milk (unsweetened)

Directions:
In a mug mix Shakeology, baking powder, salt, cocoa, and sweetener.
Next, mix in an egg and 2-3 tablespoons of water/milk.
Mix until dry ingredients are wet.
If you’d like to add peanut butter, put one dollop in the center and push it down a bit.
Microwave for 90 sec.
When it is done the edges will pull from the sides.

Protein Brownie Bites (hat tip)

1 scoop Shakeology
1 tsp melted coconut oil
enough water to mix
few drops coconut extract (optional)

Mix all ingredients. Roll into small balls or press flat and cut into small bite-sized brownies. Makes 1 serving. 1 red, 1 tsp

Pumpkin Chocolate Chip Protein Muffins (hat tip)

Ingredients:

2 eggs
1/4 cup canned pumpkin puree
1 large banana
1/2 cup natural peanut butter
1/4 cup honey
2 scoops of Vanilla Shakeology (or other vanilla protein powder)
1/2 tsp baking powder
1/2 tsp pumpkin pie spice
1/4 tsp salt
6 tsp of semi-sweet chocolate chips
Directions

Preheat over to 350 and prepare 12 muffin cups with lining muffin paper and coating with Pam or use silicone cups.
Place eggs, pumpkin, banana, peanut butter and honey in blender and blend for 30 sec.
Add Shakeology, baking powder, pumpkin pie spice, and salt. Blend until smooth.
Divide the batter among the 12 muffin cups.
Sprinkle each with 5 chocolate chips.
Bake 18-20 minutes, or until golden brown and tester inserted into the center comes out clean. Let cool.
***21 Day FIX containers (for 2 muffins): 1/2 Red, 1 Yellow, 1/3 Purple, 1 tsp ***

You can also use Chocolate Shakeology and they are delicious too!

Cookie Dough Greek Yogurt (hat tip)

Ingredients ➡3/4 cup plain Greek yogurt, 1 tbsp nut butter, 1 tbsp pure maple syrup, 1/4 tsp pure vanilla (free fix food), 1 tbsp mini chocolate chips.

➡Combine Greek yogurt with the nut butter, pure maple syrup, vanilla in your yellow cup as 1 serving. Mix until smooth. Top with mini choc chips and enjoy!!!
Tip> You can only replace a yellow cup 3 times a week with a Treat (Fix page 39)

Strawberry Sorbet (hat tip)

ingredients
4 cups frozen strawberries
4 T raw honey
1/2 cup plain Greek yogurt
1 T lemon juice
1 tsp pure vanilla extract
instructions
Place all ingredients in a blender or food processor and blend until creamy – about 3-5 minutes
Pour into an airtight container and store in the freezer.
21 day fix counts
1 cup = 1 Purple & not even 1/4 cup Red
optional
Omit lemon juice
