21 day fix Avocado egg salad

Avocado egg salad is a great way to switch up your lunch menu without a lot of work or ingredient hunting. its easy & light while also being full of flavor and creamy! ☺️When you add this to your menu plan just add hardboiled eggs & a minced onion to your meal prep.

  
Mix and spread on a bed of lettuce:

2 hard boiled eggs, 1/4 medium avocado, minced onions, mustard, garlic powder & paprika. (Add jalapeños & cayenne pepper for extra fun!) 
DELICIOUSO.

You don’t need mayo as is found in many other recipes b/c the avocado is creamy enough. 💚❤️💙
